Lanzhou Beef Noodle Atlas

One bowl taken apart: nine noodle widths from hair-thin to extra-wide, what each does in the broth, and the exact sentence to order it with.

Lanzhou beef noodles are one dough pulled to nine widths, and the width you name sets how long it cooks and how fast it drinks the broth. This page keeps the bowl as the unit: pick a width to see its size, bite and best use, build an order sentence, then read what the five colours in the bowl are actually for.

Width is ordering vocabulary, not a grade. The shop pulls the same dough for all nine; only the number of folds changes.

    Notes

All nine widths come from one piece of dough. More folds means thinner, shorter cooking, and faster swelling in the bowl.

In Lanzhou the order is width, chili level, and whether to add beef or egg. There is no "less oil, less salt" script. If it is your first bowl, order two-thin.

Clear broth is a technique, not a taste preference: it comes from skimming and straining, not from adding anything. The chili oil goes on last and the bowl works without it.
